FILTER - predict filtration performanceThe vast majority of wines today are bottled through a filter, and many wines are prepared for
that bottling similarly, by traditional, perpendicular-flow filtrations. Yet only a handful of
wineries have a tool to assess a filtration's tendency to foul. Wines are thrown at
full-scale filtrations based solely on what has succeeded in past seasons. It is akin to
adding SO2 based on a prescribed series of additions without regard for the wine's chemistry.
