ACID - forecast changes in wine acidity

The pH of musts and wines affects everything that happens in fermentors and cellars, from microbe populations to cap extraction to ageing. Having a complete picture of a wine’s acidity is essential to capturing everything a vineyard has to offer, and ACID is that complete picture.

The calculations contained within the software are purely based on how acids behave in wine - not on correlations with past data. This behavior is predictable and will follow laws of chemistry, just like acids in other solutions. This single premise is the source from which all of the forecasts made by the application arise, and it is unique to ACID. A quarter of a century has passed since its creation and it still stands as the leader in a field of one.
